Fajita Pulao/ Mexican style rice

Cooked rice and vegetables seasoned with mexican seasoning
Ingredients
  • Rice 1 cup uncooked rice
  • Oil 1 tbsp
  • Colorful Bell pepper 1 cup sliced
  • Onion ½ cup sliced
  • Mushroom 1 cup sliced
  • Tomato ½ cup sliced
  • Garlic 2-3 smashed and finely chopped
  • Garlic powder 1 tsp
  • Paprika 1 tbsp
  • Salt to taste
  • Oregano 1 tbsp
  • Chili flakes or black pepper (if required)
Instructions
  1. Wash and soak rice in a water for approximately 30 minutes. After soaking cook rice in a microwave or the way you like.
  2. Heat oil in a pan on medium to high flame.
  3. Add garlic, onions, bell peppers and mushroom.
  4. Saute it for 2-3 mins or till it is bit tender. You have to keep vegetables crunchy.
  5. Add seasoning like salt, garlic powder, oregano, paprika and tomatoes.
  6. Add cooked rice and mix everything very well.
  7. Finally check for the seasoning, adjust the taste you need.
  8. You can add mexican cheese on top of hot rice which is completely optional.
  9. Serve it just like that or have it with guacamole or wrap it into burrito or tacos.
Notes
You can add beans for protein.

You can use quinoa or brown rice for healthier version.
