Sugar free banana chocolate chip muffin/ eggless banana chocolate chip muffin

Soft banana and chocolate chips whole wheat muffin without sugar and egg.
Ingredients
  • Dry Ingredients :
  • Whole wheat flour ¾ cup
  • All purpose flour (maida) ¼ cup (optional) (Take 1 cup of whole wheat flour if you don't want to add all purpose flour)
  • Salt just a pinch
  • Baking powder ~1 tsp
  • Baking soda ¼ tsp
  • Cinnamon powder ½ tsp (optional)
  • Chocolate chips Handful
  • Wet Ingredients:
  • Oil 1tbsp
  • Butter ½ tbsp (melted or room temperature)
  • Perfectly ripe mashed banana 1½ to 2
  • Vanilla Extract 1 tsp
  • Milk 1-2 tbsp (if required)
  • Honey according to sweetness if required (I didn't use in this recipe)
Instructions
  1. Sift all dry ingredients together except chocolate chips.
  2. Take another bowl add oil and butter and whisk them together.
  3. Add remaining wet ingredients and mix it thoroughly.
  4. Preheat oven at 375 *F.
  5. Add all the dry ingredient to the wet mixture in batches and fold them gently.
  6. Mixture has to be bit thick then dropping consistency.
  7. Grease muffin pan with cooking spray/ oil / butter.
  8. Use ice cream scoop and divide mixture equally in a pan.
  9. Tap muffin pan once or twice and bake them into the preheated oven at 375*F for approximately 20 mins or till you see the cracks on muffins.
  10. Don't forget to check them with the toothpick, if it is coming out clean that means it's done.
  11. Take it out and wait for a minute or two then cool it on the cooling rack.
  12. Serve it warm or at room temperature.
Notes
Once it is cool completely then store it in a airtight container for 1-2 days.
Enjoy it warm or room temperature.
For dairy free version use almond milk if needed.
For Vegan recipe if require add agave instead of honey and almond milk instead of cow milk.
Make it in a mini cupcake pan for parties or potluck purpose.
You can add some nuts like walnut to make them more healthy.

You can add flax meal to make it more nutritious and moist. 1 tbsp of flaxseed meal and 2-3 tbsp of water and stir it well. Use this in wet ingredient.
