Baked Moong Dal Vada

Moong Dal vada is a popular snack of Gujrat, India. These crispy vadas are made up with spiced green mung dal batter and baked dumplings.
Ingredients
  • 1 cup green moong dal
  • ~2 tbsp chopped coriander (cilantro)
  • 7-8 Garlic
  • 1 inch ginger
  • 2-3 green chilli (according to taste)
  • Salt to taste
  • cooking spray/ oil
  • cupcake pan / mini cupcake pan/ paniyaram pan (apppam vada pan)
Instructions
  1. How to make moong dal vada :
  2. Soak the moong dal in water for 6-8 hours.
  3. Drain all the water from moong dal and grind moong dal, ginger garlic, green chilies to form a corse paste.
  4. Add salt and finely chopped coriander(cilantro).
  5. Preheat oven 375 *F (~180 degree Celsius) .
  6. Check all the seasoning here.
  7. Spray cupcake pan with cooking spray and divide the mixture in equal spoonful portion in cupcake pan.( mini cupcake pan will work perfect if you have it.)
  8. Bake it ~22 mins at 375*F and then few minutes on broiler ~3 minutes or till the light brown color.
  9. Insert toothpick and check it's done or not.
  10. Serve with julienne onion, green chili, green chutney or tamarind chutney( Imli ki chutney). Whatever you have on hand or you can have it with a cup of tea.
  11. You can add it in pita pockets and make your pita pocket sandwich or wrap or have it just like that it will taste good too.
Notes
1. Drain dal before grinding so that you won't get the watery mixture. It has to be
thick.
2. I have baked it for 360* F for ~20 minutes and brush it with some oil or sprayed it
with some cooking spray and then set the temperature 375 * F for 10 minutes and
then 3-4 minutes on broiler(till they are light brown).
3. To make this recipe on stove top (without oven) you can use paniyaram pan (
appam vada pan).
4. You can get ready chutneys (condiments) like cilantro chutney and tamarind chutney in Indian grocery store.
